The variety is the result of intra-population selection from the ancient local Timilia population. The plants are tall, reaching a height of approximately 126.5 cm. The variety is adapted to the hot and dry conditions of the Mediterranean region, and the historical name grano marzuolo indicates the possibility of late sowing in March.
The grain has a dark color. Compared to modern varieties, Tumminia Sg3 is characterized by a lower gluten index and dough strength with good baking performance in terms of product volume and height. The grain shows an increased content of polyphenols compared to commercial varieties. Yield under field trial conditions is approximately 1.9 t/ha.
The wheat is used for the production of traditional pasta and bread, including Castelvetrano black bread, often used as a whole grain product or in mixtures with other flours.
