Tumminia reste bianche is a variety of durum wheat known as Timilia SG2. The plant is characterized by a significant stem height and the ability to adapt to hot, semi-arid conditions and poor soils, which makes it suitable for organic farming.

The variety is early-maturing with a vegetation period of about 90 days, which is why it is traditionally sown in March. The grain contains from 11.5 to 14% protein and is distinguished by a reduced gluten content. Flour from this variety has a grayish hue and a specific aroma with notes of hazelnut and coffee, which determines its use in the production of pasta, pizza, and black bread from Castelvetrano.
