The variety is a landrace known since ancient times by the name trimeniaios. The plant is characterized as a rustic type adapted to arid conditions and high temperatures, not requiring intensive use of chemical protection agents and fertilizers.

The grain has a dark color, its flour is distinguished by a grayish hue and a protein content in the range of 11.5–12%. The flour strength index (W index) is estimated as low (about 140 ± 10), which requires specific methods of working with the dough, such as using sourdough.

The wheat is traditionally used in Sicilian baking and pasta production. Due to the specifics of the flour composition, it is recommended to consume it within a few months after milling to preserve its aromatic properties.
