Tumminia a reste bianche (known as Timilia SG2) is an indigenous Sicilian durum wheat variety. The plant is characterized by a short life cycle and is traditionally sown in the spring in hilly areas or in winter in coastal zones, reaching maturity in approximately 3 months.

The variety possesses high resistance to arid conditions and high temperatures. The grain has a dark-colored husk. Flour from this variety is distinguished by high protein content, a low gluten index, and specific organoleptic properties with aromas of malt, almond, and toasted hazelnut.

Tumminia is used in baking, in particular for the preparation of Castelvetrano black bread, as well as for the production of fresh and dry pasta, pizza, and other products.
