The variety is a local landrace with a centuries-old history. During the selection process, pure lines were isolated, such as Timilia SG1 with black awns, Timilia SG2 with white awns, and Tumminia SG3. The growing season is about three months, which is why the variety is traditionally sown in March.

The plant belongs to rustic varieties adapted to poor soils and semi-arid Mediterranean conditions, demonstrating resistance to high temperatures and drought. The grain is elongated and dark in color. The protein content is in the range of 11.5–14%, with a gluten index lower than that of modern varieties.

Flour from this variety is characterized by a gray hue and a specific aroma reminiscent of roasted nuts and dried fruits. It is used for baking bread and making pasta. Due to the low stability of characteristics, it is recommended to use the flour as soon as possible after milling.
