Tumminia is an ancient local durum wheat biotype. The plant is distinguished by a tall stem, reaching 150–180 cm, which allows it to compete effectively with weeds. The variety possesses high resistance to drought and the effects of high temperatures.

The plant has a short growing cycle, which allows it to be sown in spring in March. The ear has a conical shape, dark yellow color, and characteristic black awns; the grain is also dark in color.

Flour from this variety contains a large amount of germ and bran elements, characterized by a high protein content with a low gluten index. It is traditionally used for making whole-grain bread, pasta, and pizza, providing the finished products with a dark color, pronounced aroma, and long-lasting freshness.
