ALBILLO MAYOR is an indigenous variety, the history of which can be traced back to the time of the Roman Empire. Genetically, it is one of the direct parents of the Tempranillo variety. It has traditionally been used in blends and for the production of pisco, however, in recent decades it has been widely used for the manufacture of varietal white wines.

The plant has medium or below-average vigor with upright shoot orientation. The leaf is rounded, five-lobed, deeply dissected, with almost no pubescence on the underside. Flowers are hermaphroditic. Bunches are conical, medium density. Berries are golden-white, round, medium-sized, with fleshy-juicy pulp possessing a muscat aroma.

The variety ripens early and is characterized by low yields. It is resistant to powdery mildew and drought, while being sensitive to downy mildew, gray mold, and spring frosts. The finished wines are characterized by a golden-yellow color, good structure, a pronounced aroma of apple, pear, and tropical fruits, as well as balanced acidity.
