Variety description

Auxerrois originated in Burgundy as a result of a natural cross between the Pinot and Gouais blanc varieties. The variety has moderate vigor and forms shoots at the base of the vine. The clusters are medium-sized and loose; the berries are round or oval and yellow-green in color, which can turn brownish upon full ripening. The leaves are three-lobed.

The variety belongs to the early maturity group. It is characterized by moderate yield and susceptibility to major grapevine diseases, such as downy mildew, powdery mildew, and grey mold, as well as a tendency to berry shatter during flowering. Due to the thin skin of the berries, the variety requires careful control of harvest timing.

The grapes are used exclusively for winemaking, including the production of sparkling wines and blends. The resulting wines are characterized by moderate acidity and specific notes of quince, melon, mirabelle, honey, and almond.
