The variety is of ancient origin, presumably arising from the crossing of the wild form Vitis vinifera subsp. sylvestris with cultivated vines. The name of the variety reflects the color of the berries (Blauer — blue) and its Burgundian origin with a late ripening period (Spätburgunder — late Burgunder).
It belongs to the Burgundy family of varieties and is used exclusively in winemaking. The variety is demanding regarding climate and soil, and is also susceptible to diseases characteristic of the Vitis vinifera species, including downy mildew and powdery mildew.
Red dry wines are produced from the grapes, the taste characteristics of which depend on the terroir and vary from berry tones to complex aromas of cherry, strawberry, coffee, tobacco, and spices.
