Escanyavella is an independent and unique variety, as confirmed by genetic studies by INCAVI. The name of the variety translates as "old lady choker," which is associated with the characteristics of the berries: thick skin and pronounced natural acidity capable of causing a tickle in the throat when consumed fresh.

Wines made from this variety possess high acidity, pronounced minerality, and a dense structure. Their aromatic profile is dominated by notes of white flowers, quince, fennel, citrus, and mountain herbs. The variety is used both for creating varietal wines and in blends with varieties such as Garnacha Blanca or Macabeo.
