The variety is considered one of the oldest in Central Europe, presumably being a natural hybrid originating from Gouais blanc. The vines have medium vigor, perfect flowers, and large, rounded, three-lobed leaves. Shoots are characterized by upright tips with dense pubescence.

The variety is high-yielding, but its productivity can be irregular. Elbling is sensitive to fungal diseases such as downy mildew, powdery mildew, and grey mold, as well as to drought. Frost resistance is rated as slightly higher compared to other varieties of the species Vitis vinifera.

A wine variety intended for the production of wines with a moderate alcohol content of 10.5 to 11.5% and pronounced acidity. The aromatic profile of the wines is dominated by notes of green apples, citrus, and mineral undertones. Due to its characteristics, the variety is optimal for creating sparkling wines.
