The variety is a wine grape and originates from the ancient French variety Savagnin. The name comes from the French word sauvage, which means wild. The variety is prone to excessive green mass growth and requires careful agronomic control, including pruning and canopy management, as excessive growth hinders the full ripening of the berries.

Sauvignon Blanc is considered a finicky variety, susceptible to such diseases as grey mold, powdery mildew, and esca. Ripening times fall within the second half of the growing season. Wines from this variety are distinguished by high acidity and aromas ranging from herbaceous notes of cut grass and blackcurrant leaf to fruity and tropical tones of gooseberry, grapefruit, and passion fruit.
