The vines are medium-growing. The leaves are medium-sized, round or oval in shape, 3–5-lobed, and covered with dense cobwebby pubescence on the underside. Clusters are medium-sized, broad-conical, loose, and branched. Berries are medium, oval, and dark blue with a pronounced waxy bloom.

The variety possesses the specific property of coloring its pulp and juice. Resistance to downy mildew and powdery mildew is weak; in rainy weather, infection by gray mold is possible. The grape is relatively cold-hardy, withstanding frosts down to -20°C, and also possesses relatively high drought tolerance.

Saperavi is a wine grape variety intended for creating high-quality red wines with saturated color and good aging potential. It is necessary to distinguish the classic Georgian variety from the breeding form 'Saperavi severny', which was developed for different climatic conditions.
