The variety is the result of a natural crossing between an unknown variety and Gouais blanc. The vine has medium vigor and ripens well. The flower is hermaphroditic. The bunch is medium-sized, cylindro-conical in shape, and medium-dense. The berry is small, round, with skin color ranging from dark pink to almost black.

Xinomavro is considered demanding in cultivation, showing sensitivity to downy mildew, powdery mildew, and grey mold. The level of resistance to frost and diseases is typical for Vitis vinifera species. The variety is used for the production of red, rosé, white, sparkling, and sweet wines.

Wines from this grape are distinguished by a high aging potential. The aromatic profile includes notes of red berries, tomatoes, olives, dried herbs, earthy and spicy undertones, which change with aging to nuances of leather, tobacco, and mushroom tones.
