The variety belongs to the mid-late maturity group with late bud burst. The vines are vigorous, with a semi-upright growth habit and well-maturing canes. The clusters are medium to large in size, cylindrical-conical in shape, and have high density. Berries are large, round, with green-yellow skin and juicy flesh; leaves are medium-sized and nearly entire. The flowers are hermaphroditic.

The variety exhibits high drought tolerance, resistance to phylloxera, as well as resistance to powdery mildew and downy mildew. Due to the thick skin of the berries, the variety tolerates intense solar radiation well. Yield is characterized as medium; it may decrease under extreme growing conditions.

Asyrtico is used for the production of various white wines, ranging from dry to dessert styles. A key feature of the variety is the retention of high acidity at full berry maturity. The flavor and aroma profile of the wines includes notes of citrus, stone fruits, white flowers, and a pronounced minerality.
