The name Dame noire is most often used as a synonym for the Jurançon noir variety, common in southwestern France. This mid-season maturity variety has five-lobed deeply dissected leaves. The plant is susceptible to Botrytis cinerea and powdery mildew, and wines made from it are characterized by moderate acidity, firm tannins, and aromas of dark berries and plums.

The term is also applied to the rare varieties Douce Noire grise and Folle Noire. In commercial winemaking, the name Dame noire is often used as a brand for wines produced from other grape varieties, such as Pinot noir, Négrette, Syrah, or Mourvèdre.
