The maturity group is determined by the number of days from full emergence to harvest readiness. It is standard to distinguish early-maturing varieties with a growing season of up to 70 days, mid-maturing varieties at 70–80 days, and late-maturing varieties, for which this period exceeds 90–100 days. To refine the early-maturity potential, breeders additionally study stem metamerism, including the number of vegetative and generative nodes, which reduces the dependence of the assessment on weather conditions.

The duration of the buckwheat growing season is highly plastic and can vary by 10–20 days depending on the year's conditions and agrotechnical practices. With late sowing dates, the vegetation period is usually shortened, while with early sowing, it is lengthened. Given that buckwheat flowering and ripening are extended over 25–35 days, the maturity group is a key guideline for planning harvest operations, which begin when 2/3 of the fruits have turned brown.
