The suitability of beets for canning is determined by the intensity and uniformity of the flesh color, as well as the absence of white rings, which alter the color of the product during heat treatment.

A critical indicator of raw material quality is the content of the pigment betaine. The presence of light-colored rings on a cross-section of the root is unacceptable, as high temperatures during processing cause such areas to take on undesirable shades ranging from muddy brown to pink.

For industrial and home canning, varieties with a round or oval shape and stable dark-red flesh color are selected. If cultivation techniques are compromised, particularly due to irrigation deficits or exposure to high temperatures, the root tissue becomes coarse and develops white fibers, rendering the crop unsuitable for canning.
