The genetically determined ability of Vitis vinifera L. to withstand sub-zero temperatures without damage to buds, cane tissues, and perennial wood.

Cold hardiness is evaluated through artificial freezing of cuttings and the calculation of LT50, the temperature resulting in the death of 50% of the buds. Chlorophyll fluorescence analysis and the biochemical composition of the cane, specifically the accumulation levels of carbohydrates and proline, are used as diagnostic markers.
V. vinifera varieties are characterized by varying resistance among plant organs: roots perish at temperatures from -6°C to -11°C, while matured canes and buds can withstand temperatures from -10°C to -25°C. Cold hardiness levels determine the necessity for winter vine covering.
Cold hardiness is directly dependent on the quality of cane maturation and the general condition of the plant. Agronomic practices, such as crop load management and timely cessation of vegetation, contribute to the realization of a variety's potential resistance to extreme winter minimums.
