The fresh consumption of shallots is characterized by their delicate flavor profile, higher sugar content, and tender texture of both the bulbs and the leaves.

The high gastronomic value of fresh shallots is due to the balance of sugar and ascorbic acid. Unlike welsh onion, where primarily the greens are consumed, the shallot holds high consumer significance in both its leaf and bulb forms, the latter having a multi-primordial nest structure.
