Marketability is defined as the ratio of the mass of standard root crops to the total mass of the harvest. Standard produce includes healthy, whole, and clean root crops with color and shape typical for the variety, having a transverse diameter of 5 to 14 cm, and showing no signs of damage, sprouting, wilting, or pest infestation.

Non-standard root crops are those with deep cracks, mechanical damage, signs of decay, frost damage, or deformation. For modern varieties and hybrids adapted to intensive production technologies, the typical yield of standard produce ranges from 85 to 95% and higher.
