The vegetation period of root chicory is measured in days from the moment of mass emergence to readiness for harvest. Depending on the climatic conditions of the region, the duration of the cycle varies from 115–130 days in the Non-Chernozem zone of Russia to 140–170 days in Northwest European countries.

The accumulation of the target component, inulin, occurs throughout the entire growing season, with up to half of the total volume of this carbohydrate being accumulated in the final month of growth. A longer period allows for larger root crops, although excessive duration is limited by the risk of frost.

Since chicory is a biennial plant, a disruption in development schedules or unfavorable conditions can trigger a premature transition to the generative bolting phase in the first year, which negatively affects the quality of the raw material. Therefore, agricultural practices are focused on intensive development during the initial month of vegetation.
