A technological quality indicator of root crops that determines the yield of inulin during industrial processing. The dry matter content in high-quality raw material is 23–28% of the fresh root weight.

The dry matter content in chicory root crops is a key indicator of their industrial value. Given the standard chemical composition of freshly harvested root crops containing 72–77% water, the proportion of dry matter varies from 23% to 28%. The main component of this mass is inulin, the share of which in the dry matter can reach 75%. For the needs of the processing industry, optimal levels of soluble solids are considered to be in the range of 21–26 degrees Brix.

A high dry matter content directly correlates with the efficiency of inulin extraction and the quality of the final product, preventing the appearance of unwanted turbidity and impurities in extracts. This trait is subject to the influence of cultivation conditions, in particular, the mineral nutrition system. Excessive application of nitrogen fertilizers can lead to a decrease in inulin concentration, which impairs the technological characteristics of the raw material.
