Melon flavor and aroma

Cucumis melo L.

The assessment of melon fruit quality is based on organoleptic evaluation and laboratory analysis of total soluble solids (TSS) content, with levels above 12–15% considered an indicator of high quality.

For an objective assessment of flavor and aroma, sensory evaluation scales are used, taking into account sweetness, texture, and odor intensity, in combination with the measurement of the proportion of soluble solids and total sugars. High sugar content indicators correlate directly with the breeding value of a specific hybrid.

Sugar accumulation and aroma development require an active temperature sum in the range of 3100–3400°C and intense light. Agrotechnical control includes limiting irrigation during the fruit filling phase and balanced nutrition with a priority on potassium and phosphorus over nitrogen, which prevents sugar accumulation.

The biological maturity of the fruit is determined by aroma; however, varietal characteristics dictate strict adherence to harvest timelines. For varieties with high aroma intensity, such as the 'Efiopka' type, overripening is critical, as it provokes fermentation processes and the development of off-flavors.
