Apricot Taste and Aroma

The evaluation of apricot taste and aroma is conducted using a sensory analysis method on a 5-point scale and through chemical composition analysis of the fruit. The flavor profile is determined by a harmonious combination of sugars, which reach 16–20% in cultivated varieties, and organic acids.
