Apricot Taste and Aroma

Prunus armeniaca L.

The evaluation of apricot taste and aroma is conducted using a sensory analysis method on a 5-point scale and through chemical composition analysis of the fruit. The flavor profile is determined by a harmonious combination of sugars, which reach 16–20% in cultivated varieties, and organic acids.

In agronomic practice, taste qualities serve as a criterion for variety designation and harvesting timing. The balance of substances is sensitive to agricultural techniques: excessive nitrogen nutrition can reduce flavor indicators, while potassium fertilizers during the ripening period promote sugar accumulation. High sensory scores usually determine a variety's orientation toward the fresh market, while lower ones are directed toward industrial processing.
