Growing spinach in protected ground requires strict control of temperature and lighting due to the crop's high sensitivity to bolting when temperatures exceed +18°C and under long-day conditions.

The optimal temperature regime for spinach is +10...+13°C during cloudy weather and +15...+18°C on sunny days. Temperatures above +18°C combined with long daylight hours trigger a premature transition of the plant into the generative phase, leading to coarsening of the leaves and loss of marketable quality.
In winter greenhouses, supplemental lighting is a key element of the technology, which allows for increased planting density, with row spacing in cold frames being approximately 6 cm. The soil mixture must be highly fertile, consisting of equal parts humus and sod soil, and to accelerate germination, seeds are soaked for up to one and a half days before sowing.
