Red Elstar is a mutation of the Elstar variety. The fruits are medium to large in size and round-conical in shape. The creamy-white flesh is juicy, with a crisp texture and a balanced sweet-and-sour taste with a honey aroma.
The tree is characterized by vigorous growth and a spreading crown; fruiting begins in the 3–4th year. The variety is demanding in terms of agricultural practices and requires fruit thinning to prevent biennial bearing. Summer pruning is recommended.
The plant is susceptible to scab, powdery mildew, fire blight, and late blight, and its flowers are sensitive to spring frosts. The fruits are intended primarily for fresh consumption and are also suitable for culinary use.
