The Istarska bjelica tree has medium vigor and a dense crown with straight, long branches. The leaves are narrow and long, with a spiral twist. The fruits have an average weight of about 4 g, and their color changes from light yellow-green to reddish-purple upon ripening.
The variety is characterized by regular and abundant yields, high resistance to drought, strong winds, and low temperatures, as well as good adaptation to calcareous soils. Disadvantages include susceptibility to olive fruit fly infestation. For pollination, the Leccino and Frantoio varieties are recommended.
