PASSULUNARA is an ancient local variety, genetically linked to the biodiversity of Sicily, and may be a synonym for the Zarbo variety. The variety is considered a relic and is preserved mainly by farms, often growing within traditional olive groves.
The trees are well adapted to a dry climate, which helps to prevent a number of diseases. The variety is used for creating monovarietal oils or blends, and is valued for its nutritional value, high level of antioxidants and vitamin E.
The olive oil has an intense fruity aroma with pronounced notes of fresh grass, green tomato, artichoke, and almond. The flavor profile is characterized by the presence of balanced bitterness and pungency.
