The Pasola di Andria variety, common in Apulia, belongs to the “sweet olive” (olive dolci) group. Traditionally, the fruits are used for food and are prepared by frying or baking in ashes. The variety is also used in blends for olive oil production.

This variety is local (autochthonous) and is included in the Italian national genetic olive repository. In studies of genetic diversity, Pasola di Andria is grouped with other table varieties of the region, such as Termite di Bitetto and Cerasella.
