The Pasola variety, also known as Pasola di Andria, is a traditional local landrace from the Apulia region. The fruits of this variety contain a small amount of the bitter substance oleuropein, which allows them to be consumed after minimal processing, such as roasting or salting; the variety is also suitable for oil production.
Technical characteristics include a pulp-to-pit ratio of about 6.8. The tree is characterized by good productivity and intense production of viable pollen, which makes it an effective pollinator in olive orchards.
