The variety Sant’Agostino (synonyms Cazzarola, Oliva di Andria, etc.) is a traditional variety of the Apulia region. The tree is characterized by high growth vigor, a spreading crown of medium density, and medium-sized elliptical-lanceolate leaves.

The fruits are very large, weighing 6–9 g, and have an oval, asymmetrical shape. Early maturation allows for the harvesting of green olives in September, while at full maturity in November, the fruits acquire a dark color. The variety has a low oil content and is primarily used for table purposes.

The plant is self-incompatible and requires pollinators such as Mele, Termite di Bitetto, or Oliva di Cerignola. The variety shows resistance to peacock spot, some tolerance to Verticillium wilt, olive knot, and spring frosts. It possesses a low rooting capacity and high requirements for irrigation conditions, adapting poorly outside of Apulia.
