The Ubac tree has vigorous growth and a bushy crown shape. The variety is very early: under the conditions of southern France, fruits ripen by October 15. Yield is characterized by stability, as the variety is minimally prone to alternate bearing, and the tree is self-fertile.
The fruits are large, covered with bloom, turn black quickly upon ripening, and are prone to early dropping, which facilitates harvesting. The variety has good general resistance, including resistance to cold. It is versatile in use: it yields oil with a delicate, "pungent" taste and a slight bitterness, and is also used as a table olive.
