The Tsounati tree is characterized by significant height, reaching 20 meters, and forms an irregular crown. The leaves have a lighter shade of green than many other common varieties. The variety is early-maturing; the harvest of the oval-shaped, medium-sized fruits usually takes place from late October to early December.
The plant possesses high resistance to low temperatures and unfavorable weather conditions, which allows it to be grown in mountainous regions, though it requires high-quality soils. Tsounati olives contain about 25% oil and are used both for oil production and as a table product.
The oil obtained from this variety is valued for its balanced taste and high content of phenolic compounds. Its aromatic profile includes notes of freshly cut grass, artichoke, tomatoes, rosemary, wildflowers, and nuts.
