The Trep variety is a local rare variety adapted to the specific microclimate of the northern olive growing area in Italy. The fruits of this oil variety are traditionally harvested at the veraison stage in late October.

The oil obtained from these olives possesses a complex organoleptic profile with fruity shades, notes of olive leaves and field herbs, as well as a characteristic bitterness and a spicy aftertaste. The variety is recognized as an important subject for the conservation of the region's genetic diversity.
