Variety description

10 August 2026

The term refers to varieties of Prunus cerasus growing in the Bologna and Modena regions. This group includes various local genotypes. The trees are medium-sized, have a spreading crown shape, and often have drooping branches, being distinguished by their hardiness and low soil requirements.

The small or medium-sized fruits have juicy, tender flesh with a bitter or almond flavor note and dark, almost black skin. The ripening period is often late, and the process is prolonged. The plants have good resistance to Monilinia, but the fruits do not transport well.

The primary use is industrial and culinary processing: production of syrups, jams, candied fruits, and use in desserts, ice cream, and liqueurs.
