VISCIOLA DI CANTIANO is a local variety of sour cherry, belonging to the sour cherry group, historically grown in the area of the municipality of Cantiano on limestone and clay soils. Trees are distinguished by a broad, rounded, often drooping crown.

The plant has high natural resistance and requires practically no chemical treatments. Fruits are small, up to 20 mm, harvested at the end of June or the beginning of July.

The produce is valued for its intense aroma and taste, and is used primarily in processing for the creation of jams, syrups, liqueurs, and traditional cherry wine.
