The variety Visciola di Cerreto d'Esi is a local variety of Prunus cerasus, historically grown in the vicinity of Cerreto d'Esi. The tree is small in size and characterized by medium vigor, blooming in early spring with white flowers featuring pinkish or greenish shades.
The harvest period falls at the end of June and the beginning of July. The fruits are juicy but possess a pronounced acidity and a slightly bitter aftertaste, which is why the variety is rarely consumed fresh. Its primary purpose is processing, including the production of traditional cherry wine, preservation in alcohol, syrups, and compotes.
