The variety Gros Gilot is an old Western European pear, known at least since the mid-17th century. The fruits are large, round in shape, with green-yellow skin and an often appearing sun-blush. The fruit flesh is white, coarse-grained, and juicy.

This is an exclusively processing variety, not intended for fresh consumption after harvest. The fruits ripen in winter and are suitable for use from November to June. They are ideal for preparing compotes, jams, drying, baking, and pear wine.

The tree is characterized by vigorous growth and good yield even at a mature age; it can be trained as an espalier or grown against walls. The variety is characterized by high disease resistance; however, at a young age, it requires protection from low temperatures due to a susceptibility to frost damage.
