The name Biancona unites a number of local Italian forms, such as Biancona del Faggeto, Biancona di Castelcivita and Biancona di Esino. These varieties are not the result of modern breeding and represent traditional agrobiodiversity known in Italy historically.
Potatoes of this group are characterized by white flesh, a high concentration of starch and the content of antioxidants in the skin. After heat treatment, the tubers have a delicate, creamy and crumbly texture, which determines their popularity in local gastronomy for the preparation of traditional dishes.
Studies have revealed in individual representatives of the group, in particular Biancona del Faggeto, the presence of unique physiological mechanisms of adaptation to high temperatures. Standardized vegetation indicators for these varieties are absent due to their origin and the dependence of characteristics on growing conditions.
