The variety is the result of crossing spelt with the bread wheat variety Maris Huntsman. Unlike older long-stemmed spelt varieties, Filderstolz possesses a shortened stem, which provides high lodging resistance and suitability for mechanical harvesting.

The yield of the variety is rated as high with sufficient fertilization. Product quality is characterized by stable baking properties, high glutenin content, and a low gliadin/glutenin ratio, which has a positive effect on the volume of baked bread.

Regarding phytosanitary status, the variety demonstrates a standard reaction for modern spelt types. In studies on susceptibility to Soil-borne wheat mosaic virus (SBWMV), the variety showed a moderate degree of susceptibility.
