Russello ibleo is a local landrace variety, which causes its genetic heterogeneity and the presence of various biotypes within the crops. The plants are distinguished by their tall stature, which allows them to successfully compete with weeds; however, due to the significant stem height, the variety is inferior to modern analogs in lodging resistance and yield.

The grain of the variety possesses high technological indicators, a protein content of no less than 13 g per 100 g of flour, and a high fiber content. The name of the variety is associated with the characteristic reddish hue of the ears. The variety is traditionally used in baking, including for the preparation of bread and pizza.
