The variety is adapted to hot and dry climates, prefers sunny locations, and tolerates drought well. The leaf is kidney-shaped or rounded, smooth, bright green, with regular teeth. The cluster is medium-sized, dense, and cylindrical-conical in shape. The berry is dark purple, medium or small in size, and covered with a waxy bloom. The vine is distinguished by the light color of the wood and short internodes.
Cannonau is used exclusively for the production of red and rosé wines. The resulting wines are characterized by full body, high alcohol content, moderate acidity, and soft tannins. The aromatic bouquet includes berry-fruit notes, floral tones, as well as hints of spices and tobacco.
