The variety is ancient, likely a descendant of the Marsanne variety. Bud burst occurs early, approximately five days after Chasselas, and fruit ripening occurs one and a half weeks after it. The variety is sufficiently productive under short pruning and is well adapted to glacial moraine soils.
Clusters are small or medium, conical, and compact. Berries are ellipsoid, medium or small in size, and acquire a greenish-white to golden color upon ripening. Young leaves have bronze spots; mature leaves are small or medium, three- or five-lobed. The variety is susceptible to gray mold and downy mildew.
The grape is used as a wine variety for producing high-acid wines. The variety Roussette d’Ayze should not be confused with the Altesse variety, which is also called Roussette, or with Mondeuse Blanche.
