Variety description

The variety is characterized by an early start of vegetation and vigorous vines. Leaves are medium-sized, five-lobed or three-lobed, with bristly pubescence on the underside. Bunches are medium or small, conical in shape, with varying density. Berries are medium-sized, round or oval, with thin white skin.

The variety has low yield. Resistance to diseases is weak: high susceptibility to oidium, botrytis, and shatter (coulure) is noted, with moderate susceptibility to mildew. Genetically, the variety is the result of a natural cross between Savagnin Blanc and an unknown variety.

Wines from Ondenc are distinguished by high acidity and full body, and possess aging potential. The variety is traditionally used in the Gaillac region to create dry, sparkling, and sweet wines, as well as for the production of spirits.
