The variety has medium vine vigor and hermaphroditic flowers. Leaves are medium-sized, variable in the degree of lobing, with an uneven surface and upward-curved edges. Clusters are rather large, cylindrical-conical in shape, medium-dense. Berries are small, rounded, from dark pink to dark purple in color, with thin but firm skin.
Xinomavro is demanding in care, susceptible to diseases, especially downy mildew during a wet spring, and prone to potassium deficiency. Yield is medium and unstable; regulation is required to obtain high-quality raw material. Wines from this variety are distinguished by pronounced acidity and potential for long aging, often exhibiting notes of red berries, sun-dried tomatoes, olives, spices, and earthy undertones in the aroma.
