The variety is of ancient autochthonous origin from Northern Greece, having arisen as a result of a natural cross between an unknown variety and Gouais blanc. The plant possesses vigorous growth but requires careful management due to susceptibility to downy mildew, powdery mildew, and grey mold, as well as unstable yields.
Morphologically, the variety is represented by medium-sized cylindrical compact clusters and medium-sized spherical berries of dark purple color. The name translates as 'sour-black', which determines the organoleptic properties of the wines: high acidity and deep color.
In young wines, aromas of cherry, strawberry, olive, tomato, earthy nuances, and dried herbs predominate. With prolonged aging, the bouquet develops notes of leather, tobacco, mushrooms, and dried flowers.
