Endive is characterized by its cold hardiness and ability to withstand light frosts, which distinguishes it from other leafy lettuces. A key feature of its agronomy is blanching: 2–3 weeks before harvest, the rosettes are tied up or covered to restrict light exposure, which makes the leaves tender and less bitter. During this period, it is critical to avoid moisture accumulation on the leaves to prevent rotting.
The plant is sensitive to light and temperature conditions: early sowing during long days triggers premature bolting, so the autumn crop is usually sown at the end of June. Endive requires regular watering due to its shallow root system and prefers fertile loam or sandy loam soils with a neutral pH, as drought and unfavorable soil composition increase the toughness and bitterness of the greens.
