High gelling capacity is provided by a significant pectin content, while the intense aroma of the finished products is achieved by retaining the peel, in which enanthic-ethyl and pelargonic-ethyl esters are concentrated.

Breeding programs are focused on canning-oriented varieties, with technologically important criteria being the stability of chemical indicators with minimal variability and the absence of undesirable off-flavors related to the amino acid composition.
