Quince fruits are characterized by high pulp density and the presence of stone cells, making them unsuitable for fresh consumption but valuable for the production of jelly, marmalade, and fruit butter. High gelling capacity is provided by a significant pectin content, while the intense aroma of the finished products is achieved by retaining the peel, in which enanthic-ethyl and pelargonic-ethyl esters are concentrated.

The chemical composition of quince, including organic acids, monosaccharides, and ascorbic acid, makes it a functional raw material. Breeding programs are focused on canning-oriented varieties, with technologically important criteria being the stability of chemical indicators with minimal variability and the absence of undesirable off-flavors related to the amino acid composition. Harvesting dates and subsequent fruit ripening are critical for the standardization of industrial processing.
